Angels on Horseback Recipe

This angels on horseback recipe is a delicious British appetizer made of oysters wrapped with bacon. You'll want to use medium to small fresh shucked raw oysters, or raw oysters in a jar from the refrigerated seafood section of your grocery store. Make a lot - they'll go fast!!

Ingredients:

  • 2 12 oz jars of fresh oysters
  • 4 Tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • paprika
  • pepper
  • 16 slices of thin cut bacon, cut in thirds
  • lime wedges

Directions:

Drain oysters well. Place 1 oyster on each 1/3 slice of bacon. Sprinkle with parsley, salt, pepper, and paprika.

Wrap bacon around the oyster and secure with a toothpick.

Place "angels" on broiler rack and broil about 4 inches away from the source of heat for 8-10 minutes, or until bacon is getting crispy.

Serve with lime wedges on the side. Squeeze a little juice on them and eat while hot! Yum.
