Bacon Cheese Omelette
My favorite bacon cheese omelette is loaded with cheese and everyone loves it when I make these. Ingredients:
Directions: Put a little butter or I used bacon grease in a skillet over medium heat and add finely chopped onion. Cook onion until starting to brown and carmelize.
Beat 2 eggs with a fork and add a little salt (but not too much because bacon is usually salty.) Pour eggs directly over carmelized onions. Cover with a lid. This is what will cook the egg through.
Remove lid and add bacon pieces and cheese (I used a lot of cheese, to make it really cheesy and delicious.)
Fold over and serve. The cheese will melt, because the eggs will still be hot. If not, pop the whole thing in the microwave for 15 seconds.
