Rock your taste buds with this blackened chicken recipe and avocado cilantro cream sauce.
I have this fabulous blackened fish recipe that is super popular on Pinterest (you can follow my low carb pinboard here,) and I wanted to jazz up some chicken breasts. Enter ripe avocados that needed to be used, and this recipe took shape.
I love the way the cool and fresh Avocado Cilantro Cream sauce balances the spicy, flavorful blackened chicken. I think the combination of the two is what made it special.
Let's start with the blackening seasoning. This will make enough to use several times. I'm guessing I used 1/4 or so for this recipe, but it's a great thing to have stashed in the pantry for throwing together that quick meal.
Ingredients for Blackening Seasoning:
Combine, then put 1/4 to 1/3 of the mixture on a plate. Stash the rest in a jar and label "Blackening Seasoning." Use for fish, shrimp, etc.
Take 4 chicken breasts sprinkled with sea salt and lightly coat in the seasoning mixture. Trust me when I say lightly. This seasoning is heavy on flavor, and there's no need to cake it on.
Put chicken in a buttered baking dish and cook for 50-60 minutes at 325 degrees Farenheit, or until internal chicken temp is 165 per a meat thermometer.
While the chicken is cooking, you'll want to whip up this cool sauce.
Ingredients for Avocado Cilantro Cream Sauce
Put the above ingredients in your food processor (I use a Ninja- these are the BEST things ever!) Whirl until smooth.
When the chicken is cooked through, serve with a generous portion of sauce. You won't be sorry! Enjoy.
