Cauliflower Casserole Recipe

Here's a delicious cauliflower casserole recipe made with bacon. Yummmm...

(I'm not sure where this recipe came from - it's been saved on my computer for a long time, because obviously I thought it sounded delish.)

Ingredients:

  • 2 heads cauliflower or equivalent frozen
  • 1 lb bacon
  • 1 bunch green onions
  • 1 cup sour cream
  • 1/2 stick butter
  • 1 clove garlic, minced
  • 2 cups grated cheddar cheese
  • salt & pepper to taste

Directions:
Cut up cauliflower and steam or boil until very tender.

Cook bacon in oven then chop into small pieces, or fry it if you prefer.

Finely chop the green onions, include some of the green portion.

When the cauliflower is very tender, drain well.

Add butter and sour cream then use a mixer to mash the cauliflower mixture until creamy.

Add bacon, green onion, garlic, salt, pepper, and 1 to 1 1/2 cups cheddar.

Combine well and pour into buttered casserole dish.

Top with remaining 1/2 cup cheddar.

Bake @ 350 degrees for 20 to 30 minutes or until top begins to brown.

This mashed cauliflower recipe serves 6 to 8.
