Cauliflower Soup Recipe

Super yummy! If you need a cauliflower soup recipe, you can't go wrong with mine. Although, it was wonderful the night I made it, I swear it was even better the following day.

Ingredients:

  • 1 stick Butter
  • ½ whole Onion, Finely Diced
  • 1 soup spoon of minced garlic or 3-4 cloves chopped
  • 1 stalk Celery, Finely Diced (this was omitted when I made it because I didn't have any...and it was still great.)
  • 1 1/2 bags of frozen Cauliflower Heads (16 oz bags)
  • 1/2 bag frozen broccoli (16 oz bag)
  • 2 Tablespoons Fresh Or Dried Parsley (chopped)
  • 4 cans (14.5 oz) Low-sodium Chicken Broth Or Stock or equilavent
  • 2 Tablespoons No-Starch, Thicken/Thin *See note at bottom
  • 1 cup heavy cream added to 1 cup water
  • 1/4 cup more heavy cream for good measure
  • 3-4 teaspoons Salt, To Taste
  • fresh ground pepper

Instructions:

In a large soup pot or dutch oven (please notice I started out in a 4 quart dutch oven and it wasn't big enough!), melt 4 tablespoons butter.

Add the onion and cook for a few minutes, or until it starts to turn brown. Add celery if using and cook an additional couple of minutes.

Add cauliflower, broccoli, and parsley and stir to combine.

Cover and cook over very low heat for 15 minutes. After 15 minutes, pour in chicken stock or broth and add some salt and pepper. Bring to a boil, then reduce heat and allow to simmer.

In a medium saucepan, melt 4 tablespoons butter. Add the cream/water combination and whisk to combine. Sprinkle the Thicken/Thin very slowly while whisking into the butter/cream sauce.

Remove from heat and stir in the 1/4 more of heavy cream.

Add mixture to the soup. Allow to simmer for 15 to 20 minutes. Check seasoning and add more salt or pepper if necessary.

* Note * Thicken/Thin is a low carb thickener available online at low carb speciality stores, and worth the small investment in my opinion for those of you low carbing.

If you are not following a low carb diet, just use flour or cornstarch as your thickener.

This cauliflower soup recipe easily adapts for low carb or non low carb, and is equally delicious either way.
