Cole Slaw Recipe

Here's a quick and easy cole slaw recipe that will taste much better if you make it in advance.

Ingredients:

  • big bag shredded coleslaw mix (I buy a huge 44 oz. bag at Sams Club for around $3.00)

  • 2 cups of Real Mayonnaise
  • generous 1/3 cup of sweetener (I used Ideal - xylitol sweetener) If you're not watching your sugar intake, feel free to use sugar (but none of my family can tell the difference with xylitol or erythritol compared to sugar)
  • 1/2 teaspoon salt
  • fresh cracked pepper to taste

Directions:

Combine mayonnaise, sweetener, salt and pepper into a bowl.


Empty contents of coleslaw mix in a large bowl or other storage container.


Dump mayo mixture on top.


Mix together. It may seem too dry, but give it some time, because it will be plenty of dressing for the cole slaw mix.

Now cover and put in the fridge for several hours-2 days. This is one of those things that gets better as the flavors come together.
