Crustless Quiche Recipe

This crustless quiche recipe is made with bacon, but is easily adaptable to meet your needs. Ingredients: - 6 green onions, chopped, divided
- 2 tomatoes, chopped, divided
- 1 package bacon
- 8 oz package of fresh mushrooms, sliced
- Dozen eggs
- 1/2 teaspoon salt and pepper
- 1/3 cup Sour Cream
- 1/2 cup cheddar cheese (longhorn style if you can find it)
- 1 cup shredded mozzarella cheese
Preheat oven to 325 degrees F. Chop green onions and tomatoes, reserve 3 Tbsp. onions and half of the tomato. 
Cook bacon until crisp and set aside (I cook mine in the oven.) Keep about 1 Tbsp of bacon grease in your skillet and add mushrooms cooking for a few minutes, then remove from heat. Crumble bacon and add it along with onions and tomatoes to the skillet. 
Beat eggs, salt, pepper, and sour cream until well blended. (I just threw mine in the Ninja and gave it a whirl.) Pour into a greased 9X13 inch baking dish. 
Top with bacon mixture, then cheeses. 

Bake for 30-40 minutes or until center is set. 
Top with the remaining green onions and tomatoes.
Other ingredients you could use: sausage, ham, chorizo broccoli, asparagus, spinach, green chilies muenster cheese, mexican blend, swiss Use whatever you have handy!
