Easy Chicken Salad Recipe

Sometimes simple is better; this easy chicken salad recipe is delicious, but very simple. Do with it what you like, but I can tell you that stuffed into this avocado, it was to die for.Serves 2 (or 4 avocado halves) Ingredients: - 1 cooked chicken breast - or a can of chicken
- 4 green olives (pimiento stuffed)
- 2 Soup spoons of real mayonnaise
- 1 oz of cream cheese
- slivered almonds or chopped pecans
- salt
- avocado to stuff (optional)
Now normally I may have added some chopped celery to the mix, but I didn't have any, and I didn't miss it, either. I used a leftover grilled chicken breast, and it was seasoned with lemon pepper, so if you're using plain chicken you could add a bit more seasoning to taste. Instructions: I used my new Ninja (by the way, it's wonderful), but you don't need it to make this. I simply threw all of the ingredients (minus the almonds and avocado) in the Ninja and gave it a whirl. If you're not using a Ninja, simply chop the ingredients and combine in a bowl.
