This garlic almond chicken is fantastic, sauteed in butter with garlic, slivered almonds and fresh parsley. Thanks to my Aunt Dee Dee for the recipe.
Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium to medium high heat. Sprinkle both sides of chicken breasts with sea salt.
Put chicken and oil and brown thoroughly on each side. Remove from skillet and set aside.
Reduce heat to low (even pull your skillet off the heat for a bit to let is cool - as I burned my garlic, but it still tasted great.) Now add garlic and almonds to what's left of the oil and stir around. It will get a little dry, so then add the last 2 tablespoons of butter and continue to stir the garlic and almonds.
Now return the chicken to the skillet and top with fresh chopped parsley. Turn it back and forth and mix the parsley in with the garlic and almonds and spoon that on top of chicken breasts.
Remove and serve. This garlic almond chicken is rich and flavorful so a simple side salad was a nice side dish.
