Greek Shrimp Recipe

Greek Shrimp

I love this meal because you can serve it over rice for carb eaters, or serve it with steamed veggies or zucchini noodles for low carb people. It tastes so great you don't actually need anything to go with it. It's pictured all by itself, which is just the way I ate it. Enjoy!


  • 1 pound raw shrimp, shelled, deveined
  • 1/3 cup extra virgin olive oil
  • 1/2 large onion
  • 2 garlic cloves, chopped fine
  • 1/4 cup fresh parsley, chopped fine
  • 3-4 medium tomatoes, chopped
  • 1 bay leaf
  • 1/2 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon hot sesame oil
  • 1/2 teaspoon salt
  • 1/2 + cup crumbled Feta cheese
  • 10 black olives
  • Juice from 1/2 lemon

Preheat oven to 450 degrees F.

Begin by chopping onion and garlic.

Heat olive oil in large skillet over medium high heat and add garlic and onion and cook until onion is translucent. While onion/garlic is cooking, chop tomatoes and parsley.

Put mixture in a 7.5" X 12 " pan. Top with feta, then black olives. Squeeze lemon juice over all, and pop into oven for 15 minutes.
