Hobo Dinners have long been one of my favorite quick easy dinner ideas, and by simply eliminating the potatoes, you have a low carb dinner. Since each packet is individually wrapped, it's easy enough to add potatoes into the foil packets of your low carb family members if applicable.
Pre-heat oven to 375 degrees F
Make hamburger patties in whatever size you choose. We prefer 1/2 pound patties for more of a hamburger steak. Season the patty generously with garlic powder, seasoning salt and grill mates.
Place each seasoned hamburger patty in the center of it's own piece of foil (approximately 12 inches or more)
Place onion slices on top of the hamburger patty.
If adding potatoes - place potato pieces (wedges or rounds) on top of onion. I like to sprinkle a little more seasoning salt on potato pieces (or onion - whichever is on top.) You may have to fold the foil sides up already to keep your potatoes on top.
Top with mushrooms - however many you'd like, and add a a couple pats pat of butter on the onion (or potatoes.) Then give those mushrooms and butter a dusting of garlic powder. Bring foil together over the top of it all and seal tight. It should look kind of like a hobo bag that could be tied to a stick
Important Note: The foil packets MUST be sealed tight, if you can see inside at all, add another piece of foil over it! This lets the potatoes steam and makes the meat juicy. If your foil packet has a leak, the meat will be dry and the potatoes raw!
Place the hobo dinners directly on wire racks inside of your oven and cook for approximately 1 hour. If you've made big patties, you may have to cook slightly longer.
These are delicious and so easy with zero cleanup.
