If you don't know how to make an omelette, it's very easy, and you might as well make a good one. If you do know, this is a fantastic egg omelette recipe.
This bacon mushroom spinach and jack cheese was something I came up with based on an omelette that I had in a restaurant 10 years ago. It's become my go-to omelette for a filling super delicious breakfast. I hope you enjoy it too.
Cook a few pieces of bacon. Set aside on paper towels, cool, and chop.
Scramble eggs in bowl. Chop baby spinach and add to eggs with some salt and then add chopped bacon.
Put a tablespoon or two of butter in a 10 inch skillet over medium heat and add mushrooms and onion.
Sautee onions and mushrooms until they are turning brown.
Add the egg, spinach and bacon mixture to the skillet over the top of the mushrooms and onions.
Reduce heat just a little below medium and cover the skillet with a lid.
Wait patiently for egg to cook until no longer runny. Remove from heat and add cheese to one side, and flip other side over cheese. It will be hot enough to melt it.
Now the optional, but recommended part. Smear a tablespoon of sour cream on top of the omelette. Just trust me, the coolness of the sour cream is such a nice compliment to the flavorful rich omelette. Enjoy!
