  • 1 pound fresh medium shrimp

In a large saucepan, combine first 4 ingredients; bring to boil. Add shrimp, stir gently. Cover and cook until tender, about 5 minutes. Drain and serve.

Cocktail sauce: 1 cup LC catsup, 1.5 tsp. old bay seasoning, 1/2 tsp. prepared horseradish.

Good Smoked Salmon

  • l or 2 tbs. of Ranch Dressing
  • 2 tbs. of sliced green olives

Good by itself, stuffed in a tomato, or over lettuce

Tuna and crackers:
  • 1 can tuna drained

  • diced red onion
  • mayo
  • Linda Sue's cheese crackers

Mix the tuna, onion, egg and mayo to make a tuna salad Make 2 slices of Linda Sue's cheese crackers with deli deluxe american cheese Top a cracker with tuna salad and enjoy

Parmesan Fish
  • Thin fish filets
  • Mayonnaise
  • Grated parmesan Cheese

Place filets in a greased baking dish. Combine equal parts mayo & grated cheese. (You can season this mixture with garlic & herbs). Spread mixture over fish filets. Sprinkle with a litle additional cheese and bake at 400 til fish is done. You can flip on the broiler to get the top crispy & brown

I've made this with just about every type of fish and used both the powdered (green can) parmesan and the finely shredded....it's a great low carb seafood recipe and FAST!

Tilapia and Garlic Mushrooms
  • Tilapia filets
  • pre-sliced mushrooms (1 package)
  • fresh diced garlic, olive oil, parmesan cheese

Directions:

Place the tilapia fliets in a baking dish and drizzle 1-2 TBSP olive oil on top. Sprinke garlic on top of fish and cover with the mushrooms and sprinkle of parmasean. Bake at 350 for 30-40 minutes, depending on the thickness of the filets.

This has a wonderful flavor due to the garlic and mushrooms. I also like to add zucchini and some sliced tomatoes. Olives might be nice, too, although I have never tried it that way.

Salmon sauce:

Equal parts mayo and sour cream (I usually do half a cup of each) Lime Juice (a squirt or two...) Tons of fresh dill, chopped. (a handful, dried works too, but add more)

Mix and spread over salmon while it grills. It cooks nicely and gets crunchy around the edges.

My husband goes fishing a lot and since we have been low carbing, we frequently do this recipe with fish to bake it:

top with oil/vinegar and italian seasoning and bake --we used to use bottled italian dressing

or top with parmesan cheese with any seasoning of your choice and bake -we like Old Bay

They are both delish!!!

This is going to sound weird, but we love it!

Fajita Fish

  • Tilapia filets
  • oil
  • beef fajita seasonings

Brush the fillets with oil then sprinkle fajita seasonings. Grill indoors or outside. AWESOME LOW CARB SEAFOOD RECIPE.

TUNA MUFFINS

Drain pickles on paper towel well. Spoon some tuna salad on each pickle. Serve cold.

Tuna in a Pepper
  • Mayo
  • Tuna
  • 1 Red pepper

mix mayo and tuna cut red bell pepper in 1/2 lengthwise fill with tuna mixture.

Butter Fried Tuna and Onion

1 cup of chopped onion (this lazy cook buys it pre-chopped) Sautee in butter until soft Add 2 cans of Tuna and saute until tuna gets all crispy nummy. This is great how it is but can be dressed up by adding sliced cherry tomatoes and/or mayo

Dijon Salmon
  • Salmon fillet
  • Dijon Mustard
  • Optional -- Grill Seasoning like Montreal Chicken, Spicy Seafood Seasoning, OR dry dill

Spread a thick layer of mustard on the salmon. Sprinkle with optional seasoning if you like. Bake at 350 just until the salmon is done but not dry. This is better than some salmon I've had in restaurants, and so, so easy.

Shrimp & Cocktail Sauce
  • 1/2 c. homemade LC Catsup or Heinz One Carb Catsup
  • 2 TBSP Horseradish to taste (I like it to bring tears to my eyes)
  • 12 oz. bag frozen cooked, peeled medium shrimp, thawed (cheap at Costco or Aldi, in the midwest)

Stir the horseradish into the catsup. Dip a shrimp into the sauce & eat. Repeat.

Pesto Salmon

You'll need:

  • one piece of raw salmon per person
  • a jar or tub of pesto

Broil or grill the salmon on one side only. If your fish has skin on one side, put this side up first. When done on the first side, turn the fish over, smear pesto all over the uncooked side, and continue grilling or broiling until done on this side. That's it!

Tequila Shrimp
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, chopped
  • 1 1/2 pounds large shrimp - peeled and deveined
  • 1/2 cup tequila
  • 1/2 cup chopped fresh cilantro
  • salt and pepper

Melt butter in a large skillet over medium heat. Saute garlic until light brown. Place shrimp in the pan, and cook for 3 minutes. Pour in tequila, and season with cilantro, salt, and pepper. Cook for 2 more minutes. This is a terrific low carb seafood recipe.
