Cilantro Lime Mahi Mahi Recipe
This cilantro lime mahi mahi recipe is delicious and very easy to prepare. I know when my picky 4 year old loves something, that it's probably going to be well liked by almost everybody, except you cilantro haters which is something I just don't get! I can't take credit for this, as it's my friend Misty's creation. I didn't have the avocados to top it with guacamole, but it was yummy just as I prepared it here. Ingredients:
Directions: Salt the Mahi filets and place in a lightly buttered baking dish. Preheat the oven to 400 degrees F.
Chop cilantro.
Combine the juice of the lime, the butter, garlic, and chopped cilantro in small saucepan. Simmer for a few minutes.
Spoon mixture evenly over the fish.
Place in oven for 15 minutes. Baste the fish with the hot butter from the baking dish, and turn the oven to broil for approximately five more minutes. (Be careful if your oven is dirty when broiling; it can catch on fire. Don't ask me how I know - haha!) Remove and serve with a green salad or your favorite veggies.
