Orange Roughy Recipe - this one is fantastic and super easy. Thanks to my friend Cathy for a fabulous way to prepare Orange Roughy Fish.
Cut your peppers and onion into strips. (note: I don't think Cathy used onion, but I thought it was a nice addition.)
Take a couple Tablespoons of butter and a tablespoon of Olive Oil and melt it in a large skillet.
Saute peppers and onion until starting to brown.
Place orange roughy fish fillet on large piece of foil and season with garlic, sea salt, and pepper.
Top with peppers and onions and seal the foil packet.
Cathy put hers on a grill for 20 minutes; I put mine in a 350 oven for 20 minutes (a recent fire on the grill that may or may not have been my fault - I accept no blame when there's no witness to it - prevented me from firing up the grill again this time.)
Fantastic and EASY! I served mine with a simple wedge of iceberg lettuce and homemade ranch dressing.
