Pan Fried Spaghetti Squash

This pan fried spaghetti squash is both easy and delicious. When it comes to spaghetti squash, I'm all about simple.  I love the flavor of it, and never use it as a substitute for anything.  It stands on its own in my book.

  • 1 medium spaghetti squash, cooked and cooled shredded and de-seeded
  • 2 TB butter
  • 1/2 teaspoon sea salt
  • 1 handful fresh baby spinach leaves


Heat butter in a large skillet over medium-high heat.  Add shredded spaghetti squash, and let sit for a minute or two.  Let it brown, then turn over with a spatula.  Repeat until at least half of it has caramelized a little.  Throw spinach in and give it a stir. Remove from heat.

Serve.  It's so good.  Pictured here with my simple salmon recipe.
