Parmesan Crusted Chicken

This parmesan crusted chicken recipe was easy and full of flavor. That's a win-win combination in my book!

Parmesan Crusted Chicken


  • 2 boneless skinless chicken breasts
  • mayonnaise
  • Parmesan cheese, the powdered kind from a can
  • dried parsley flakes
  • garlic powder
  • salt to taste


Recipe serves 2-3; adjust amounts accordingly.

Rinse and pat dry chicken then cut chicken into desired sized pieces. Lightly sprinkle with a little sea salt.

Put approximately 1 cup of powdered Parmesan in a pie plate or other dish along with 1-2 tablespoons of parsley flakes and 1/2 tablespoon of garlic powder (adjust if you don't care for garlic!)

Stir to mix.

Put a couple big spoons of mayonnaise in a bowl and use a silicone brush to coat the chicken on both sides then immediately dip in the Parmesan cheese mixture. Flip it over and coat the other side as well. Push the cheese into the chicken and mayo. Set aside on a foil lined baking dish (mine was not foil lined-a decision I later regretted!)

Bake in a preheated 375 degree oven for approximately 30 minutes (depending on thickness of chicken and how many you're preparing, to an internal temperate of 170 degrees F.)

We loved the flavor of these, but I didn't make enough! My three year old picked them up and ate them just like chicken strips!
