This pimento cheese recipe is far better than anything you could buy in the store, it's less expensive, and naturally low in carbs!
In a large bowl add pimientos to grated cheese. Stir in mayonnaise and use your judgment as you may want a little more mayo. Cover bowl with some plastic wrap and refrigerate several hours or more before serving to let the flavors blend.
This pimiento cheese spread will keep for a long time in the fridge (well - if you're not eating it - won't last long around my house)
Ideas for low carbers:
Stuff celery, put inside a lettuce wrap, put inside a low carb tortilla, spread on cucumbers, eat with a spoon! Do you guys have more ideas??
