Simple Chicken Recipes

Each of these simple chicken recipes have three (okay sometimes 4) ingredients and are a super easy to make.

This is a compilation of other people's recipes, and some of them I have tried and modified; others I have not, but hope you will find some easy chicken dinner ideas.





















Bacon Feta Chicken

  • feta cheese
  • bacon
  • chicken breasts

1. Put Feta Cheese Slices on top of chicken breasts
2. Wrapped with bacon slice(s) and secure with a toothpick
3. Bake at 350 for about 30 minutes or until chicken is cooked
4. Broil on high for about 3 minutes to crisp the bacon.

Diet Rite Cola Chicken

Serves 4

  • 4 chicken breast
  • 1 can diet rite cola
  • 1/2 cup low carb ketchup

Put all ingredients in a medium sauce pan (yes the raw chicken too) and bring to a boil. Put a lid on it and turn to medium heat for 30 minutes......take the lid off an let simmer for another 10 minutes.

This makes a really good bbq chicken. I shred it up and just keep some in the fridge.

Bacon Cream Cheese Chicken
  • boneless skinless chicken breasts pounded to thin out
  • garlic herb cream cheese
  • bacon

Put spoonful of cream cheese in center of chicken breast, wrap bacon around and secure with toothpicks. Brown for a bit to get bacon started. Finish in oven at 350 for about 30 minutes.

A simple chicken recipe and absolutely fabulous!!

Bacon Wrapped Chicken
  • Boneless Chicken breasts and/or Thighs
  • Soy Sauce
  • Sliced bacon

Cut chicken into 1 1/2" X 1 1/2" chunks. Marinate in soy sauce for about 2 hours. Drain and wrap about 1/3 of a bacon slice around each chunk. Thread on Bamboo skewers. Broil til bacon is crispy and chicken is cooked through, about 12-15 minutes. You can let the chunks cool, remove from the skewers and then store in the freezer in Ziploc bags. Let them thaw, then microwave later to re-crisp bacon & heat chicken chunks. DELICIOUS, and pretty cost-conscious if you mix boneless thighs with breasts and get a LOT of bacon on sale.....All you need is a salad or a veggie to complete the meal....

Mexican Chicken
  • 2 chicken breast halves
  • 1/4 salsa
  • 1/4 cup shredded cheese

Bake uncovered at 350 until the juices run clear. I usually triple this and freeze for later, truly a simple chicken recipe.

Chicken Parmigiana

chicken breast cooked then topped with marinara and fresh mozzarella cheese (freeze at this point), then when ready, bake until the cheese melts

Stuffed Chicken

chicken breast stuffed with any kind of cheese and either ham or veggies (spinach, mushrooms, onions), etc.

Stir Fry Chili Garlic Chicken
  • Chicken Breast Strips
  • Chili-Garlic Sauce (usually near the Asian/soy sauce at the grocery store)
  • Broccoli

Just put a little vegetable oil in a pan, add chicken till its brown, add sauce, stir, add broccoli and stir until chicken and broccoli is done. Not sure if you can freeze it but its simple and quick to make. (Everyone of LCF raves about this simple chicken recipe)

Crock pot Rotisserie Chicken
  • 1 whole chicken
  • Spray olive oil
  • Lawry's seasoned salt

Ball up aluminum foil and put in bottom of crock pot. Place seasoned chicken on top. Cook on high 4-6 hours. Of course if you have a rotisserie oven this simple chicken recipe is done in a rotisserie in no time.

Chicken Olive Salad
  • Shredded Chicken
  • Mayo
  • Sliced Green Olives

Mix together

EASY Buffalo Chicken knock-off
  • Boneless Chicken Breasts or Thighs
  • Prepared Ranch Dressing
  • Franks Hot Sauce

Season chicken with salt & pepper, then saute in a non-stick skillet til cooked through. Leave in Pan. Combine Ranch & Hot sauce in a separate bowl, (usually 2 parts Ranch to 1 part Hot sauce....depends on how spicey you like it) Pour over sauteed breasts and let the sauce GENTLY warm up. NOTE: Don't let the sauce heat too much or it will separate.

Creamy Chicken
  • 1 bag - 2.5 to 3 lb bag of frozen chicken breasts
  • 1 package cream cheese
  • 2 can cream of chicken soup (Cream of Chicken & Mushroom is lower in carbs if you can find it!)

Place all in crock pot and cook all day. Great over french style green beans or cauliflower.

Mexican Chicken Breasts
  • 1 bag - 2.5 to 3 lb bag of frozen chicken breasts
  • 1 package cream cheese
  • 1 Jar (large) salsa

Place all in crock pot on low and cook all day. A versatile simple chicken recipe; use it on salads, inside lettuce wraps, inside low carb tortillas, or just eat with a fork.

Orange Chicken
  • 4-5 chicken breasts
  • 1 can diet orange soda
  • 1/3 cup soy sauce

Combine chicken, soda and soy in gallon freezer bag. Refrigerate overnight. Bake at 350 degrees for 1 to 1 1/2 hours. Basted it every now and then while it is cooking. I have also made this in the crock pot it has wonderful flavor.

Chicken tenders

Roll chicken in beaten egg and roll in Parmesan cheese (green can) and fry.

Ranch Chicken Tenders
  • boneless, skinless chicken breast tenders
  • parmesan cheese (green can)
  • Ranch Dressing Dry mix (in dressing aisle)

Mix parmesan w/ranch mix to taste (depends on amount of chicken used. About a 1c parmesan to 1/2 pack of mix ratio for me). Wet tenders with some water and roll in mix to coat very well. Place on baking sheet covered with foil for easy clean up. I usually put any leftover mix on top of the chicken, the more the better. Bake at 425 for about 10 mins or until cooked through. Try and catch them as soon as they are done so that they are super moist.

Butter fried chicken

Boil up a chicken. Throw the skin away. Shred the meat. Fry it til crisp in butter with salt, pepper, and garlic powder. Easy! Plus, homemade chicken broth for later use.

Chicken taco meat
  • 4 skinless boneless chicken breasts
  • 1 package taco seasoning
  • 1 can ro-tel tomatoes

Place in crock pot on low and cook all day. Shred. Use in tacos, burritos, enchiladas, salads, etc. Great hot or cold

Crock Pot Barbecue Chicken
  • 1 cut up chicken, beef chunks, pork pieces or just any meat you may want to use
  • 1 bottle your favorite barbecue sauce
  • Seasoning to your liking
  • 1 large onion - cut into chunks

Place seasoned meats or chicken in crock pot. Pour barbecue sauce over and chunk up the onion. Cover and cook until done -- about 8 hours on LOW. Serve with what ever your family likes best. I know you'll use this simple chicken recipe over and over!

Pesto Spinach Chicken

I grilled some chicken and added some pesto sauce (little jar), then sauteed some fresh spinach and put the chicken on top! It was very yummy!

Hot Boobs
  • 4 boneless skinless chicken breast
  • 1 bottle of wing sauce (usually the hottest we can find for 0 carbs

Put in crock pot at cook all day. Shred when is comes out of crock pot. Eat as it is or my favorite is to roll it in a low carb tortilla and blue cheese dressing with lettuce. DD loves it in omelettes.

Asian Sesame Grilled Chicken
  • Boneless, Skinless chicken breasts
  • Wishbone Asian Sesame vinegarette dressing

Marinate chicken in dressing overnight. Grill until done. This is SO good! I serve it with Broccoli made with soy sauce and some of that bottle chili sauce mentioned earlier in the thread (the hot, not garlic stuff that is easy to find. lol). This simple chicken recipe is GOOD stuff!

Bacon Ranch Chicken 2 ways! Both are amazing simple chicken recipes

  • boneless breasts
  • dry ranch mix
  • Thick cut bacon

In a small pan (pie tin would do) put ranch mix in, roll chicken lightly in mix, wrap with bacon. Cook 30 mins or until chicken is done @ 375 degrees. Then transfer next to broiler to crisp bacon. Turn after a couple mins to crisp both sides.

  • Boneless breasts
  • bottle regular ranch dressing
  • bacon (any kind thick or thin)

Spray baking dish with cooking spray.

In separate dish, squirt dressing into a bowl or pan. Roll chicken pieces in, then layer in dish. Bake @ 350 til chicken is done. Crisp up bacon while chicken is cooking. Crumble on top when dish is done.

Another Parmesan Chicken
  • 1/2 cup Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breasts or tenders

Combine the mayo and cheese (you can add a little Italian seasoning, if you want). Place chicken on a foil lined baking sheet and top with mayo-cheese mixture. Bake at 425 for 20-ish min.

Another Orange Simple Chicken Recipe
  • chicken thighs
  • Heinz One Carb B-Q Sauce
  • Sugar Free Orange Marmalade
  • soy sauce

Put the thighs in crock pot, mix the B-Q sauce, marmalade and soy sauce together and pour over thighs. Cook 6-8 Hours on low, 3-4 Hours on high.

I didn't put amounts because you can adjust this to whatever size you want. Also, you can sprinkle some garlic powder, salt and pepper and any other spices on the thighs when you put them in the pot. You can thicken the juices by cooking down or adding some guar or xanthan after removing the thighs. I served them with steamed broccoli and deviled eggs - yummy!

Chicken Thighs

Chicken thighs in crock pot, jar of hot sauce and when done add sour cream to the sauce.

Tarragon Vinegar
  • frozen chicken breast
  • Soy Sauce
  • Tarragon Vinegar

Throw it all in a casserole dish with a lid, making sure the chicken breasts are really well covered with the sauce and bake for an hour at about 400 (depending on your oven). Simple and easy and makes good snacks when cut into strips. Good time saver when you can't watch a skillet. Could throw all this in a crock too in case you can't be at home.

Italian Chicken

I have some chicken tenders, frozen whole green beans, and some Italian dressing mixed together in the crock pot. Looks and smells really good. Gonna serve this simple chicken recipe with some penne pasta tonight.

Hot Broccoli Wingettes

So i went home last night and had some left over wingettes. I put them in a large skillet. I poured one bottle of low carb BBQ sauce over the wings. I then sprinkled red pepper flakes and 1 packet of splenda over the BBQ sauce. I kept spooning and turning the wings in the sauce and keeping them covered. Then I got a great idea! Why not add raw broccoli to it! So i got some raw broccoli out and put in in the pan also.....I felt the steam would soften the broccoli. Continued to keep it covered and spooning the sauce over the broccoli and chicken wings.

Once the broccoli was a little softened, I turned off the heat and just left it covered.

I then put it on to plates and put some soy sauce on it and WOWOWOWOWOW it was fantastic!

Definitely will use this BBQ recipe with dried red pepper flakes on a chuck roast in the slow cooker.....YUM YUM YUM!!!!!!

Italian Cream Chicken

Hmm just made a lovely simple chicken recipe. Skinless boneless chicken thighs, Italian dressing, cream cheese (I used lower fat) Put in crock pot low for several hours. It was a delish simple chicken recipe. Next time I will add canned chopped mushrooms.

Buffalo Chicken Dip

Spread cream cheese in the bottom of a baking dish. Top with cooked shredded chicken (boiled or rotisserie is good). Add Wing sauce on top of chicken. Top with Mozzarella cheese

Bake in 350 degree oven until cheese on top is melted and dish is bubbly.

Serve with pork rinds or celery sticks

4 ingredients, but yummy!

Tecnokitty's Italian Chicken with "Noodles"
  • Chicken breast or tenders (can either be frozen or not)
  • Spaghetti Squash
  • 1 bottle kens lite Italian dressing

Put chicken in baking dish and pour dressing over the top. Cover baking dish and bake in the oven till done. Cut Spag squash in half and scoop out seeds. Microwave till you can easily pull out the "noodles" with a fork. Take the chicken out and put on a plate. Dump all the dressing and sauce over the "noodles" and stir well. Put on serving platter and lay the chicken on top. This is really good and even better cold the next day out of the fridge!

Chicken Green Enchilada Bake
  • green enchilada sauce
  • chicken
  • pepper jack cheese
  • 1/2 cup sour cream

Bake chicken for 45 min add green enchilada sauce mixed with 1/2 c sour cream pour on chicken and bake for 15 min. Melt pepper jack chicken on top of chicken in microwave. You may have to adjust baking time on chicken I used boneless skinless thighs. Hmm this is 4 ingredients, anyone counting? It's still a simple chicken recipe.

Roasted Chicken & Baby Spinach with Parmesan Cheese
  • Chicken (cooked & sliced in thin strips)
  • cellophane bag of Baby Spinach leaves
  • 1/4 of a sweet onion (thin sliced)
  • 1-2 cloves garlic minced

Purchase either a rotisserie chicken OR in the deli department they often sell Boars Head Brand (I believe) of a cooked chicken they can slice to any thickness.

I quickly saute the entire bag of baby spinach leaves plus thinly sliced onion & my minced garlic in approx. 1 Tbsp. bacon grease OR olive oil. Add salt, pepper. Cook a minute or two. Add in as much of the cooked chicken you like (I used a breast plus a few extra bits that I pulled from the backbone). Add some Italian seasoning to taste & lots of Parmesan cheese. VOILA!!!!

Like I said earlier... you can add mushrooms, tomatoes etc!

Parmesan crusted chicken

OMG! It's awesome! I have been watching a commercial for this for weeks now and I finally googled a copy cat recipe..LOW CARB STYLE Here it is....

Preheat oven to 350.

  • 4 chicken breast, thawed
  • 1 cup s/f mayo(i use dukes)
  • 1/2 cup parmesan cheese (dry grated powder, not shredded type)

Spray baking dish with pam, place chicken in dish, in small bowl mix mayo and parmesan cheese, spread over each breast, evenly.

For crust, use about 1 cup crushed porked rinds. I also added some dry chives to this part. But you can add parsley or leave it out. You could also just use a little extra parmesan on top of each breast. Whichever topping you use, just sprinkle it liberally over each breast.

Bake uncovered at 350 of 20 mins or until done in center.

Such a simple chicken recipe and so yummy!! I had to walk away or I would have eaten it ALL!!

Thighs and Veggies

fried some thighs (no breading) in olive oil , added a box of frozen veggies I had and the Chinese hot sauce mentioned on early on in this thread oh my goodness this has changed my eating for life!! Trying not to eat the whole thing as hubby didn't like it can you say picky eater?

Green Chili Simple Chicken Recipe

I put skinless boneless chicken thighs and canned green chilies in crock pot. When getting ready to eat I mixed sour cream in the sauce. I think I will add green enchilada sauce as well next time I really wanted more sauce.

And More Chicken Parmesan
  • Chicken parts (I use thighs bone in skin on)
  • Parmesan Cheese
  • Chili Powder

Mix Chili Powder into parmesan to taste dredge chicken in parmesan bake 400 degrees for 35 minutes

like shake n bake use any seasoning you like. LOVE the goodies in the bottom of the pan! In my opinion a must try simple chicken recipe.

Cheesy chicken
  • 4 boneless chicken breasts
  • 1 cup parm cheese
  • 1 cup Mayo

Preheat oven to 350. Mix mayo and cheese together. Dredge chicken in mix and place in 9x13 pan. Pour remaining mix on top of chicken. Bake for about 30 minutes or until tops bubble up and brown

BUFFALO WINGS
  • Wings
  • Frank's Hot Sauce
  • Melted Butter

Bake wings for an hour at 350, turning over halfway through. Mix equal parts Frank's and butter, and toss wings in the sauce. Add more Franks' if you like them hot.

BLUE CHEESE DIP:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup blue cheese crumbles.

Whir it with a hand blender.

Use it for crudités, or to dip the above posted buffalo wings.

Mexicali chicken (sorry 4 ingredients)
  • chicken breast pounded flat
  • taco seasoning
  • jalapeno slices
  • cheese

Sprinkle pounded chicken with taco seasoning and let chill in the fridge at least a couple of hours. Then brown chicken in skillet or grill pan ( I use cast iron grill pan) Top with jalapenos (to taste) and cheese ( I like queso blanco) but I've used cheddar jack, pepper jack ( in which case you don't need the jalapenos) Colby and monterey jack Pop under the broiler until the cheese is melted.

Buffalo Strips
  • 1 bag frozen Boneless/Skinless Chicken Strips (Sam's Club)
  • Texas Pete Hot Sauce
  • Melted Butter

Bake chicken strips until cooked through.

Put chicken, hot sauce & melted butter into a bowl with a lid that seals and shake, shake, shake! Then if you want you can grill them to make them a bit crispy - I skip this step in the winter.

Serve with bleu cheese dipping sauce & a green veggie.

Special Chicken
  • Boneless/skinless chicken breasts or strips
  • bacon
  • dried beef - sliced

Wrap each breast with dried beef slice or 2 and then wrap with bacon. Bake in 400 degree oven until cooked through & juice runs clear.

Do NOT pour off grease. Pull chicken out of the over & pour sauce over sizzling chicken. Mix slightly with grease. If you pour off the grease, your chicken & sauce will end up dry. Put back in oven and cook for additional 15 minutes.

Special Chicken Sauce

  • 1 small container sour cream
  • 1 can cream of mushroom soup
  • fresh mushrooms

Mix sour cream, mushrooms & soup together. Pour over chicken as above.

Chicken Mole'
  • Shredded chicken (your choice of how you get it - I used to crock pot a whole chicken, now I open a can)
  • 1/2 C. onions - diced
  • Mole' Seasoning
  • 2 cups chicken broth (I save mine from when I actually do crock pot whole chickens and freeze it)

Mole' Seasoning

  • 1/2 t. nutmeg
  • 1 t. cumin
  • 2 T. chili powder
  • salt & pepper to taste

Add everything together, bring to a boil then reduce heat to a simmer for 30 minutes or so to give the flavors time to meld.

Creamy Chicken and Vegetables (one serving)
  • Chicken cut in strips (stir fry with cayenne, paprika and chili powder to taste)
  • 3/4 C Frozen mixed vegetables
  • 2 T cream cheese
  • 2 T heavy whipping cream

Mix all together in frying pan and top with grated parmesan cheese. My favorite!

4 carbs/545 calories

Easy Chicken Parmisan

Ingredients:

  • 4 skinless, boneless chicken breasts (8 ounces each)
  • 1 cup marinara sauce
  • 3 1/2 ounces provolone cheese, thinly sliced

Directions: 1. In a large, deep, nonstick saut頰an, add salted water to a depth of 2" and bring to a boil. Slip the chicken into the water and reduce the heat to medium.

2. Cook until the chicken is just firm to the touch, about 10 minutes. Immediately remove the chicken from the water and pat it dry with paper towels. Season the chicken with salt and ground white pepper.

3. Preheat the broiler.

4. Spray a rimmed baking sheet with cooking spray. 6. Place the still-warm chicken on the baking sheet. Spoon the sauce evenly over the chicken and cover them with the cheese. Broil about 6" from the heat until the cheese is a little bubbly and golden brown. Remove the chicken from the oven and serve immediately.

Serves 4.

Nutritionist's note: Many jarred marinara sauces are very high in added sugars. Check the nutrition labels and buy one that contains no more than 5 grams of carbohydrates per 1/2 cup.

Those Chicken Things

for each serving you need

  • 1 boneless skinless chicken breast - pounded out
  • 1 oz cream cheese
  • 1 green onion - chopped up
  • bacon slices

Put cream cheese and onion into chicken breast and roll up, tucking in ends. Wrap until covered in bacon (sometimes requires a 3rd hand) and use toothpicks to secure.

Cook until cream cheese just begins to ooze out.

I like these best on the charcoal grill (they become chicken crack) but can be done in skillet or maybe on indoor grill.

Chicken/Broccoli Alfredo
  • cheddar cheese
  • jarred alfredo sauce (I use Ragu)
  • broccoli
  • cooked chicken chunks (or canned) - I usually use leftover chicken from a previous meal

**I precook the broccoli in the microwave because I like it soft

Oops, just realized it has four ingredients but is so easy and good. Mix the cooked chicken, broccoli and alfredo sauce (no measurements, I just eyeball it for a saucy mix). Top with cheese and pop in the oven for about 30 minutes.

Cauliflower Creamed Chicken
  • 2 cans of Cream of Chicken or Cream of Mushroom soup
  • 2 cups of shredded cauliflower
  • 2 chicken chicken breasts

Mix 1 can with with cauliflower add little garlic salt put thawed chicken on top and pour other can mixed with garlic salt on top. Cover with foil and bake at 350 till chicken is done. Add shredded cheese to the top if you want and bake some more till melted.

Mexican Chicken
  • 1 bag - 2.5 to 3 lb bag of frozen chicken breasts
  • 1 package cream cheese
  • 1 Jar (large) salsa

Place all in crockpot and cook all day.

This one in particular is up my alley!! Have to dig out the crockpot. So many other yummy entries! Down about 3 lbs or so since starting over ... plugging away ... These message boards are going to get me through!

Italian Chicken
  • 4 to 5 lbs chicken quarters (I paid $.59/lb - $3.00 total)
  • 1/2 bottle Ken’s Italian Dressing (the 1g carb per serving variety)
  • 1 can chicken broth

In a large crockpot, place the chicken, pour in the can of broth, then cover the chicken with the dressing. Cook on high for 4 hours or low for 8 hours. That’s it.

I added some pepper and a few tablespoons of butter, but it was totally unnecessary in my opinion.

The chicken came out fall-off-the-bone tender and juicy. The chicken can be eaten with the soup as a chicken soup, the meat can be put over a salad, or eaten plain. It’s not ‘finger food’ so use a fork.

Total prep time was 5 minutes. Maybe less. Total cost was maybe $4.00 for a massive amount of chicken.

Slow Cooker Chicken
  • 1 (2 to 3 pound) whole chicken
  • salt and pepper to taste
  • 1 teaspoon paprika

Directions

1. Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker. 2. Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil. 3. Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

Tarragon Chicken 4 servings

preconditions: Heat Oven to 180 degrees

Ingredients:

  • 2 lbs boneless, skinless chicken breast.
  • 4 oz butter
  • 2 tbs dried tarragon
  • pint heavy cream

Preparation Method:

1 Put chicken breasts in one layer into overproof dish.

2 Roughly chop butter and distribute over chicken breasts. Sprinkle tarragon all over them.

3 Cover with foil, bake in oven for forty five mins, no need to stir.

4 Remove from oven, turn up oven to 200 degrees. Add cream and return dish to oven without the foil.

5 Cook for fifteen mins. Sauce will thicken.

Sweet Chicken Bacon Wraps
  • 1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
  • 1 (1-pound) package sliced bacon (brown sugar or maple syrup kind)
  • 2/3 cup firmly packed brown sugar
  • 2 tablespoons chili powder

Preheat oven to 350 degrees F. Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp. *Not low carb unless you modify it*

Chinese Take-Out Brown Sauce
  • 3 T. Soy Sauce
  • 2 T. Oyster Sauce
  • 3 T. Cooking Oil
  • 1/2 cup chicken broth (or beef broth if making a beef dish)

Put first 3 ingredients in skillet or wok and heat on medium high. Add your protein and cook til mostly done. Add veggies. Add broth slowly and only add entire amount if it's ok for the sauce to be thin or unless you want to add a thickener like ThickNthin.

I use this sauce for Asian Chicken & Broccoli: Chicken breast meat - cooked & cut into chunks or thin slices Broccoli spears (fresh or frozen - I use frozen & buy at Sam's in the huge bag)

Tex-Mex Chicken
  • Chicken breasts (I like to season it with Konriko Greek Seasoning - no MSG)
  • Top with diced bell pepper & onion

Bake @ 350 for 30 minutes. Top with shredded cheddar cheese. Place back in oven until the cheese is melted (about 5 minutes). This is a super simple chicken recipe.

Chicken Spaghetti Squash

Wondering if I can take my old Chicken Spaghetti recipe and just leave out the spaghetti - Using Spaghetti Squash instead or Miracle Noodles.

Mexican Chicken

Ingredients:

  • Boneless Chicken Breasts
  • Grated Parm Cheese for "breading"
  • 1 Jar Salsa
  • Shredded Cheese, any kind

Cooking Method: "Bread" the chicken with grated parm cheese. Fry in a little olive oil until done. Add a jar of salsa. Continue on low heat until salsa is hot. Add a handful of shredded cheese, any kind you like. Turn off heat, put cover on pan and let sit until cheese is melted.

More Mexican Chicken
  • Chicken breast...boneless skinless any number
  • cover the chicken breasts in powedered Taco Mix
  • Cook @ 350 until about 10 minutes before done
  • Add 2 Tblspoons sour cream to each chicken breast

Cover all in salsa. finish cooking. oboyoboy...a very simple chicken recipe and good.

Sweet Potato Cream Chicken
  • 2 Sweet potatoes
  • 4 Chicken breasts
  • 2 cans cream soup (could probably find something lower carb to sub in for this)
  • Seasonings of your choice (or none, so it doesn't really count)

I took two sweet potatoes and cut them in half. Laid them in a casserole cut side down, and seasoned. Covered those with thawed chicken breast, also seasoned. Poured cream of chicken soup over them, then baked at 375° for about an hour. The chicken was perfect, but the potatoes could have been softer. I may parboil them next time.

Dijon Garlic Chicken
  • chicken thighs (I used boneless)
  • I bottle Maple Grove Farms sugar free Dijon salad dressing
  • 2 heaping TBS Trader Joe's Aoili & Garlic Mustard

Place thighs in pans.....blend the other 2 ingredients and pour over the top. Bake uncovered at 350.......Till it looks brown and golden & the sauce has thickened up. Yummm, it was awesome. I made it up.

Chicken Pizza
  • 4-6 Chicken cutlets (those are the super flat chicken breasts)
  • Pizza sauce
  • Mozzarella Cheese

1. Bake the chicken cutlets in a Pammed pan for 20 minutes at 350, or until cooked through. (These are great gems to have on hand anyway)
2. Top with a little pizza sauce and cheese.
3. Broil on LOW for about 5 minutes or until cheese is melted.

**You can add pepperonis, mushrooms, green peppers, olives, even crumbled Italian sausage.

***For an even lower-carb try on it, use alfredo sauce (with spinach and feta) instead of red sauce with traditional pizza toppings.


Delish Chicken
  • skinless boneless chicken breasts (sliced work best for this)
  • sauerkraut (no sugar added)
  • low carb thousand island dressing
  • swiss cheese (thinly sliced or shredded)

Place breasts in an oven pan to cover the bottom. Cover with about 1" of sauerkraut, then fully cover all sauerkraut with thousand island dressing.

Cover completely with foil (sealing to the pan). Bake at 350 until breasts are done (usually about 25-30 minutes). *Note by Tiffany* For whole breasts it took 45 minutes.

Remove from oven, add cheese to top, replace foil let sit for 5 min (I leave mine on the top of the stove, but I guess you could put it in the turned off oven) and when cheese is melted it's ready to serve. (I turned the broiler on and put it in there for just a minute or so and made the cheese bubbly.)

I enjoy mine alone, but for my family I do yams on the side.
