If you're lucky enough to have a garden producing tons of squash, put it to good use with a yellow squash casserole.


Ground Beef and Yellow Squash Casserole Recipe

Ingredients:
  • 3 yellow squash
  • 1 can Ro-Tel tomatoes (use mild if you can't handle the heat)
  • 1 pound ground beef cooked with 1/2 chopped onion and drained
  • 1 package of taco seasoning (or homemade taco seasoning coming!)
  • 2 cups grated cheddar cheese

Directions:

Brown ground beef with chopped onion, drain grease. Return skillet to heat and add taco seasoning and ro-tel tomatoes.

Slice squash into thin rounds. In a casserole dish, layer squash, then meat, then cheese.

Put into a preheated 350 degree F oven for 20-30 minutes until bubbly and hot. Suggested side: Garden Salad


Country Squash Casserole Recipe

Ingredients:

  • 2 large squash, sliced
  • 1 large zucchini, sliced
  • 1 cup chopped onion
  • 2 tablespoons butter
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken and mushroom soup
  • 1/2 cup sour cream
  • pinch of salt
  • 1 cup slivered almonds
  • 1 additional tablespoon butter, melted

In a skillet, saute squash, zucchini, and onion in the 2 tablespoons of butter. In a large bowl, combine the vegetable mixture, cheese, soup, sour cream, and salt. Transfer to a buttered 9X13 inch baking dish. Combine slivered almonds with melted butter, and sprinkle over vegetable mixture. Bake uncovered in a 350 degree oven for 25-30 minutes.


Cheesy Green Chili Squash

Ingredients:

  • 4 1/2 cups sliced yellow squash
  • 1/4 cup butter
  • 1 4 oz can chopped green chilies
  • 1 4 oz can sliced mushrooms, drained
  • 1 8 oz package cream cheese, softened and thinned a bit with a splash of heavy cream
  • Sliced almonds or crushed pecans

Directions:

Cook squash in salted water. Melt butter in another saucepan and add chilies and mushrooms. Drain squash and add to the green chilies/mushroom mix. Simmer 10 minutes. pour into a 9 X 13 buttered pan. Spread the cream cheese over the squash mixture. Sprinkle with almonds or pecans. Bake at 350 until lightly browned.


Baked Squash

Ingredients:
  • 5 pounds yellow squash
  • 2 eggs, beaten
  • 1 stick butter, melted
  • 1/4 cup splenda or powdered erythritol (preferred)
  • Salt to taste
  • 2 tablespoons finely chopped onion
  • dash of pepper

Slice washed squash into thin rounds. Cover with water and boil until tender. Drain in colander.

Beat eggs, add sweetener and beat more. Mix all ingredients together and pour into greased casserole dish. Bake at 350 degrees F for 25 minutes.
