Sugar Free Lemon Berry Jello Dessert

I came up with this sugar free lemon berry jello dessert one day when I saw a commercial for Sonic lemon berry slushes, which are loaded with calories and sugar.This was a nice light summery sugar free dessert, and my three year old loved it, too. Ingredients: - 1 box Sugar Free Lemon Jello
- 1 cup Seltzer Water (regular water would be fine)
- 1 cup hot water
- 1/3 cup full fat cottage cheese
- 3 strawberries, sliced
Prepare jello according to package, subbing Seltzer water for the cold water (if you have it.) Put in fridge, and let set for about half of the required time. As it starts to thicken, but is not set up yet, stir in the cottage cheese, and then the sliced strawberries. Return to fridge and let set completely. Cut into cubes and serve in a margarita or champagne glass. I used cottage cheese to give it a little protein and make it more filling. The nutritional information is as follows - I made it two servings because people tend to eat more than the boxed serving size.
