Turnip Casserole

Try this delicious turnip casserole, similar to potatoes au gratin, but much better for you!

  • 4 whole Turnips
  • 3 cloves (to 4 Cloves) Garlic
  • 2 cups Gruyere Cheese (or other cheese)
  • 6 Tablespoons Butter
  • Chicken Broth
  • Heavy Cream
  • Salt And Pepper, to taste
  • Fresh chopped flat leaf parsley, or dried if fresh isn't available.

Preheat the oven to 375º.

First peel and thinly slice the turnips and mince the cloves of garlic. Grate about 2 cups of Gruyere or other cheese. Gruyere can be found at Sams Club for a decent price, although it's still an expensive cheese. Sub what you find appropriate for your budget.

In a large oven-proof skillet melt 3 tablespoons of butter over medium-low heat.

Place a single layer of turnips on top of the butter. Next, sprinkle a little of the garlic on top and then add a couple of tablespoons of butter.

Then add a generous splash of chicken broth over the turnips.

Follow with an equally generous splash of heavy cream.

Then add some finely chopped parsley.

Sprinkle lightly with a bit of salt. Add a layer of cheese – about ½ cup.

Repeat layers two more times. Top with some freshly ground black pepper.

Put skillet into your preheated oven until hot, bubbly, and the cheese is nice and brown, about 20 minutes.
