Yellow Squash Recipe

You'll want to try this yellow squash recipe made with sour cream and dill. It's a perfect side dish to make when your garden is overflowing with veggies. I wasn't sure if this was going to be good, but we loved it, it was easy, and I will be adding it to our regular rotation of veggies.

Ingredients:

  • 6 small summer squash, unpeeled and sliced
  • 1 small onion sliced thin
  • 1 cup sour cream
  • 1.5 tsp salt
  • 1/2 tsp dill weed
  • 1/4 tsp pepper
  • 1/4 cup water

Directions:

Put squash, onion and water in a covered pan and cook until tender (about 15 minutes).

Drain well. Mix squash with sour cream, salt, dill weed, pepper. Heat slowly to serving temperature. Do not boil.

Yum!
